1/4 c. Mint leaves + extra
1/4 c. Sugar
1/3 c. Lime juice
1 c. White rum
2 c. Club soda
Lime for garnish

Happy summer! It’s time for hanging on the porch, warm days, and cocktails on patios. Fresh mint and limes complement each other wonderfully in this classic Cuban cocktail that’s perfect for happy hour on a 90 degree day or a weekend afternoon wind-down.
1. Roughly chop or tear mint leaves and place in the bottom of a pitcher.
2. Add sugar and lime juice to the pitcher and muddle. (Muddle means mash it all up; the back of a wooden kitchen spoon will work just fine if you don’t have a muddler).
3. Add rum and stir to combine. Fill 4 highball glass (or any tall glass of your choosing) with ice.
4. Divide the rum mixture and add 1/2 cup of club soda to each cocktail. Garnish with a lime wedge and extra mint.
