What You Do


1.  Separate lettuce leaves, rinse and set aside to dry.


2.  In a large skillet, sauté sausage for about 3 minutes.  Add mushrooms and onions and continue to cook over medium-high heat until onions soften and mushrooms render their liquid (approximately minutes).


3.  Add squash and garlic and cook for an additional 2 to 3 minutes, until squash is just tender but not mushy.


4.  Pile lettuce leaves on a serving plate. Transfer the sausage mixture to a bowl and serve alongside lettuce with hot sauce for topping.

What You Need


1 head Romaine or Iceberg lettuce

4 Andouille sausages; 1/2 inch dice

1 lb. Crimini mushrooms; 1/2 inch dice

1 Small zucchini; 1/2 inch dice

1 Small yellow summer squash; 1/2 inch dice

1/2 Small sweet onion; minced

2 cloves Garlic; minced

Hot Sauce (for topping)

Lettuce wrap dishes often have a strong Asian influence, which is delicious but why limit ourselves?  This recipe draws on some great Cajun and summer flavors, but still offers the light, refreshing crunch of cool lettuce to balance out some heavier flavors.  Feel free to mix up the veggies and use your favorites or whatever you have on hand.
